🛒 Ingredients
- 2 cups long-grain white rice, rinsed
- 4 boneless, skinless chicken thighs or breasts
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme or rosemary

🍳 Instructions
Sear the Chicken:
- Heat olive oil in a large skillet or pot over medium-high heat. Season chicken with salt, pepper, and thyme. Sear chicken pieces until golden brown on both sides. Remove and set aside.
- In the same pan, add onion and garlic. Sauté until softened and fragrant.
- Stir in rinsed rice and cook for 1–2 minutes. Pour in chicken broth and bring to a simmer.
- Place seared chicken on top of rice. Cover and reduce heat to low. Cook for about 20–25 minutes or until rice is tender and chicken is cooked through.
- Fluff rice with a fork, garnish with fresh parsley or green onions, and serve warm.
