Yields: 4-6 servings Prep time: 10 minutes Cook time: 45-60 minutes

Ingredients:

  • 3 large sweet onions (such as Vidalia or Walla Walla), sliced about ¼-inch thick
  • 4 tablespoons unsalted butter
  • ¼ cup packed light brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Equipment:

  • Large skillet with a lid

Instructions:

  1. Sauté the Onions: Melt the butter in a large skillet over medium heat. Add the sliced onions and stir to coat them with the butter.
  2. Slow Cook: Cover the skillet and reduce the heat to low. Cook the onions slowly, stirring occasionally, for 30-45 minutes, or until they are very soft, translucent, and slightly caramelized. The exact time will depend on the heat and the type of onion.
  3. Make the Glaze: Uncover the skillet and increase the heat to medium. Add the brown sugar, apple cider vinegar, and Worcestershire sauce to the onions. Stir well to combine and dissolve the brown sugar.
  4. Glaze the Onions: Continue to cook, uncovered, for another 15-20 minutes, stirring occasionally, until the sauce has thickened and the onions are beautifully glazed and a rich golden-brown color. Be careful not to burn the sugar.
  5. Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley, if desired, and serve hot as a side dish.
