1 lb (450g) sausage (Italian or breakfast), casings removed- 4 cups peeled and diced potatoes (Russet or Yukon Gold)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk or heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper, to taste
- Optional garnish: chopped green onions or crispy bacon bits
🍳 Instructions
Cook Sausage:
- In a large pot, cook sausage over medium heat until browned and cooked through. Remove and set aside.
- In the same pot, melt butter. Add onion and garlic and cook until softened.
- Stir in flour and cook for 1-2 minutes to form a roux.
- Slowly whisk in chicken broth until smooth. Add diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- For a creamier texture, blend part of the soup with an immersion blender or transfer some to a blender, then return to pot.
- Stir in shredded cheddar cheese and milk (or cream). Cook until cheese melts and soup is heated through.
- Return cooked sausage to the pot and stir to combine. Season with salt and pepper.
- Ladle soup into bowls and garnish with green onions or bacon bits if desired.
