  • 1 lb (450g) sausage (Italian or breakfast), casings removed
  • 4 cups peeled and diced potatoes (Russet or Yukon Gold)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk or heavy cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • Optional garnish: chopped green onions or crispy bacon bits

Cook Sausage:

  • In a large pot, cook sausage over medium heat until browned and cooked through. Remove and set aside.
