Yields: 4 servings Prep time: 5 minutes Cook time: 30-45 minutes (depending on thickness)

Ingredients:

  • 4 boneless, skinless chicken breasts (about 6-8 oz each)
  • ¼ cup mayonnaise (full-fat recommended for best results)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Optional additions for extra flavor:

  • ½ teaspoon smoked paprika
  • Pinch of red pepper flakes
  • Fresh herbs (parsley, thyme), chopped

Equipment:

  • Baking dish (9x13 inch recommended)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease your baking dish.
  2. Prepare Chicken: Pat the chicken breasts dry with paper towels. Place them in the prepared baking dish.
  3. Make the Coating: In a small bowl, combine the mayonnaise, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper (and any other optional spices you're using). Mix well to form a thick paste.
  4. Coat the Chicken: Evenly spread the mayonnaise mixture over the top of each chicken breast, ensuring they are fully coated.
  5. Bake: Bake in the preheated oven for 30-45 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The topping should be lightly golden brown. Cooking time will vary depending on the thickness of your chicken breasts.
  6. Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for 5-10 minutes before slicing and serving. This helps the juices redistribute, resulting in even more tender chicken. Garnish with fresh herbs, if desired.
