Lemon Garlic Butter Chicken with Creamy Pasta

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts, halved horizontally to make 4 cutlets
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

For the Creamy Parmesan Pasta:

  • 8 oz pasta (linguine, fettuccine, or spaghetti)
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • Salt and pepper to taste

Equipment:

  • Large skillet
  • Large pot

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve about ½ cup of the pasta water before draining.  
  2. Prepare Chicken: Season the chicken cutlets on both sides with salt and pepper.
  3. Cook Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.  
  4. Make the Lemon Garlic Butter Sauce: Reduce the heat to medium. Add the butter and minced garlic to the skillet. Cook for about 30 seconds until fragrant (be careful not to burn it). Stir in the lemon juice and Italian seasoning.
  5. Make the Creamy Parmesan Sauce: Pour the heavy cream into the skillet with the lemon garlic butter sauce. Bring to a simmer, stirring occasionally. Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste. If the sauce is too thick, add a little of the reserved pasta water.  
  6. Combine and Serve: Add the cooked and drained pasta to the skillet with the creamy Parmesan sauce. Toss to coat. Return the cooked chicken to the skillet and nestle it in the pasta. Sprinkle with fresh parsley and serve immediately.
