Easy Slow Cooker Steak Bites

Ingredients:

  • 1.5 lbs beef stew meat (chuck roast cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups beef broth (low sodium)

  • 2 tablespoons cornstarch
  • 4 tablespoons cold water
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Sear the Steak Bites (Optional but Recommended): Heat the olive oil in a large skillet over medium-high heat. Season the beef cubes generously with salt and pepper. Sear the steak bites in batches, ensuring not to overcrowd the pan, until browned on all sides. This adds depth of flavor. Transfer the seared steak to the slow cooker.
  2. Add Aromatics and Broth: Add the minced garlic, Italian seasoning, thyme, onion powder, and smoked paprika to the slow cooker with the steak. Pour in the beef broth and Worcestershire sauce.
  3. Slow Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the steak bites are fork-tender.
  4. Make the Gravy: Remove the steak bites from the slow cooker and set aside, keeping them warm. Pour the liquid remaining in the slow cooker into a small saucepan. In a small bowl, whisk together the cornstarch and cold water until smooth. Stir the cornstarch slurry into the sauce in the saucepan. Bring to a simmer over medium heat, stirring constantly, until the gravy thickens. Season the gravy with salt and pepper to taste.  
  5. Serve: Return the steak bites to the gravy in the saucepan and stir to coat. Garnish with fresh parsley and serve hot over your favorite sides like mashed potatoes, rice, or noodles.
