Ingredients:

  • 1 lb Boneless, Skinless Chicken Breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun Seasoning (store-bought or homemade)
  • 1 tablespoon Olive Oil

  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, thinly sliced
  • 1 Green Bell Pepper, thinly sliced
  • 4 oz Mushrooms, sliced (optional)
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth

Instructions:

  1. Cook Pasta: Cook the pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining. 2. Season Chicken: In a bowl, toss the chicken pieces with the Cajun seasoning until evenly coated.  
  2. Cook Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.  
  3. Sauté Vegetables: Add the sliced bell peppers and mushrooms (if using) to the skillet. Cook, stirring occasionally, until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Make the Sauce: Pour in the heavy cream and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce the heat and let the sauce simmer gently for 5-7 minutes, or until slightly thickened.
  5. Add Cheese and Chicken: Stir in the grated Parmesan cheese until melted and smooth. Return the cooked chicken to the skillet and toss to coat with the sauce. Season with salt and black pepper to taste.
